Assuming that you don't really require any of the new features then
sure, you can use 1.6.1.
Any really major problems that we discover that could allow your
confidentiality or data-integrity to be compromised or could allow
your data to be destroyed get documented in the "known issues" file:

There haven't been any such issues fixed between 1.6.1 and 1.8.1.
There *are* a few current known issues which are potentially real
dangers (if someone is maliciously attacking you), so you should read
that file in any case.

P.S. I know what the problem is with the simplejson requirement and
