We also need to discuss a policy for settings in the tahoe.cfg.

The first thing that comes to mind is the expiration settings.

Since I'm ultimately looking for a solution for daily backups, there will be
a great deal of cumulated deal shares over time. (In fact, we may need to
initially set a policy that we can't do backups of that type.)

In the case that we disallow "daily backup" scenario, the grid is still
useful for me for files that do not change, but accumulate (music and photo
libraries come to mind).
